The Wines

As is the case for the vines, the grape is treated with care and respect, we do not tamper unnecessarily with the fruit in order to extract the finest juices from each vintage.

When the long-awaited harvest arrives, the fruit from each individual plot is vinified separately in either tank, barrel or cask in to distinguish the terroir and provide you with the best from each parcel of vines. After the harvest, patience is then required through the regular tasting and longer fermentation process, during which natural yeasts are used as much as possible.

All this is done in the quest for balance, finesse and a desire to offer Pinot Noir and Sauvignon (Blanc) in their purest forms.
